creamy-feta vinaigrette

I came across this salad dressing in the June edition of Food & Wine (no wonder I love this magazine…just so happens to be two of my favorite things :)

Anyway, I love most things that involve feta cheese and greek salads are one of my favorites so I figured I would like this dressing.
I modified it a bit from the recipe and here is what I ended up using:
1/2 cup feta cheese
2-3 Tbsp. White Balsamic Vinegar
1 Tbsp. olive oil
1 Tbsp. water
salt & pepper
All blended together in the Magic Bullet
This dressing went a-top a mixture of arugula, radishes and cucumbers (from the farmer’s market finds) and was a big hit. The taster loved it and it was a great way to use some of the 10 lb block of feta from Costco.  Mom, please remind me of this next time I want to make this purchase again ;)
Served with some salmon and asparagus it was a perfect meal!

ask the nutritionist: is this really bad for me?

Since I am a Nutritionist, this is a question that I get all the time. And honestly, it is a pretty hard one for me to answer.  My mantra really is: Everything in Moderation. In my ideal world everyone would have access and be able to afford – and want to eat organic, “whole” foods, free of preservatives, artificial sweeteners and refined flours. I am also realistic though. I am certainly not going to “recommend” Doritos, but if they are what you are really craving than by all means have some Doritos!  I think the more high quality food you eat, the less you crave processed foods which really are no match to a great loaf of home-made bread.
So fill your diet with fruits, vegetables, whole grains and fish – and a little good cheese, olive oil and wine for good measure!

green monster smoothie: parts two & three

The second try of the beloved Green Monster smoothie went much better than my first try.
With the addition of frozen peaches and brown rice protein powder it turned out to be a much nicer color than the first edition but still not the vibrant green that I had seen.
Taste? Delicious!

Well they say the third time is a charm and that definitely was the case for me and my quest to find the perfect Green Monster smoothie.
I finally had almond milk and used fresh spinach on this one which I think helped add to the fabulous color!
Ingredients:
Frozen banana, almond milk, fresh spinach, Naked’s Green Machine and hemp protein & fiber powder.

This was by far the best-tasting and is the winning combo – I will of course keep trying new flavors to keep it fresh but I will be making this recipe again very soon!

farmer’s market finds

The first trip to the farmer’s market of the season is one that makes me a little nervous – will they have any vegetables? (there were freezing temperatures a little over a month ago).  My first trip unfortunately was a cold and rainy day so I didn’t really spend too much time but I did manage to find a few veggies and enjoy some hot coffee ;)
I picked up some radishes, asparagus and arugula and turned them into an amazing Saturday night dinner.
The farmer’s market is one of my favorite parts of the summer and I’m looking forward to many more visits in the months to come!
