After my seafood-filled day, I was in need of some major veggies. There is nothing I love more than grilled veggies and normally I leave that job up to the taster but today I started my new cooking venture – grilling!
I spritzed the zucchini, yellow squash, eggplant, yellow pepper and red onion with a little olive oil and salt and pepper and grilled away…

For a side – finally some delicious tomatoes – these are the first really good tomatoes I’ve had this summer and I’m so excited that they are here! Brushetta here I come. More olive oil and salt and pepper for these guys – perfect!

On a bed of arugula from the Farmer’s Market I topped the veggies with some balsamic vinegar and was ready to dine. It was a deliciously fresh summer meal. Next time I’ll add some Portabella mushrooms.

ask the nutritionist: calorie counting

I’m often asked about calorie counting and whether or not I do it. It’s one of those things that people love or hate. I love doing it – but not on myself.  I’ve gone through various phases where I estimated and wrote down everything I ate. I’ve kept track of fruits and vegetables, grams of fiber (The F Factor Diet) and most recently I’ve used the Lose-It app on the iphone. This app is fabulous if you are counting anything and is easy and fast to use. Except one minor problem – it makes me absolutely insane. I always have a rough idea about how many calories I’m eating but when there is a running total throughout the day? I swear there is some button that turns on and makes me want to eat everything in sight. Which is why I don’t count anything anymore. I just listen to my body. I like to check-in with myself every so often to make sure I’m not too far off base or if my jeans are tight but last week when I tried it for fun (yes, apparently this is the sort of thing nutritionists find fun…) but I noticed almost an immediate change in how I felt. I felt I needed to eat and I needed to eat less, all to just get the right “number”. How ridiculous.  So the moral of the story is that everyone is different and everyone’s bodies are different (another whole lesson in itself) and what works for me might not work for you. Listen to yourself and find YOUR balance!

the perfect snack

As you have probably noticed by now, flavors from the Mediterranean are some of my favorite. It is all the more reason to travel – ever since I visited Greece I seem to sneak those classic Med flavors into everything! Here is a picture from Githio, a little coastal town that we visited.  Love Greece.

Anyway, onto the snack. Cucumbers topped with hummus and tapenade. I could eat this all day. One of my favorite combo’s combining vegetables, protein, fiber and good fats. It works for me!

Then I tried a twist on the old favorite…I toasted a tortilla (French Meadow Bakery’s Fat Flush that is sprouted & flourless and my favorite) in the oven until crispy, topped with hummus, a tomato slice and some tapenade. It. Was. Pure. Heaven.

PS. I’m watching Mama Mia and REALLY missing Greece! :) (and singing along, I’ll admit to that)

in my cupboard: mo’s dark chocolate bacon bar

Yes, it’s true. This doesn’t come as a surprise – chocolate covered bacon was the new “it” food of the Minnesota State Fair last year but I had NEVER seen it in stores. Until now.

Now I’m willing to try anything once. (almost anything) This chocolate bar really is a culinary experience and the salty and sweet combo is a great one! I was not expecting to like this because bacon and chocolate?!?!? I mean really? But Vosge’s Haut Chocolat got it right.
Next flavor to try? There really are too many to choose  – I would have to say that the Organic Habana Candy Bar (organic deep milk chocolate + crunchy plantains) or the Barcelona Exotic Candy Bar (hickory smoked almonds + Fleur de Sel grey sea salt + deep milk chocolate). I’m not sure how I feel about the Enchanted Mushroom Candy Bar (organic dark chocolate + mushrooms) though…
