wedding countdown

I can’t believe our wedding is less than 2 months away! If you are familiar with the knot, you know those annoying emails that come, proclaiming “Two Months to Go! Here’s what you need to do!” I delete it because it stresses me out and then end up going directly to the website so I make sure I’m not missing anything. :)

Last weekend was my bridal shower and bachelorette party with my good friends and we had a blast! It was wonderful having a weekend with my closest friends!

 

Onto the other wedding details…

Food:

Although our tasting was months ago, we still haven’t made any final food decisions. (I’m sure the knot will send me a reminder any day now.) Between me and you, I’m kind of thinking that they might come out with new menus for summer/fall and it would be just horrifying to decide without all of the available options, don’t you think? We have started to narrow it down however.

Invites:

Are finally decided on! After loving one, ordering another, canceling the order, loving another one all in about the time span of 72 hours, a decision was finally made – just in the knick of time and they went out last week. Do you know how expensive paper is? (I’ll never tell my Dad, buwhaha)

Dress:

Apparently I don’t excel at making decisions. Like the invites, before I knew what happened, I had ordered 5 different dresses, finally trying on “the one,” making a decision – and then moving on to shoes and jewelry, which are almost done! Hint: it’s an everyday designer and was the least expensive “major” item purchased!

Flowers:

The venue is grey and white so we are using a splash of color with magenta flowers. I can’t wait to see them!

Ceremony:

Because we aren’t getting married in a church, we have to really hash out a lot of the ceremony details on our own and it has now moved to the top of our priority list! The fun part is that we can add our own twist, and really have a blend of religions and cultures.

And that leads me to today – with a long to-do list and a teensy frazzled feeling, I’m starting to get really excited for this wedding! (The one that is in 52 days, not that I’m counting or anything) :)

blue cheese mushroom crostini

This dish is both luxuriously flavored and perfectly hearty. Creamy blue cheese coats mushrooms for a delicious crostini topping. I had this dish recently at King’s Wine Bar in South Minneapolis and it was my favorite dish of the evening by far – I knew I had to try and make it at home.

I wasn’t sure if I wanted to make a roux and melt the blue cheese into that, or if I wanted to add goat cheese, but eventually (and perhaps lazily) I decided on melting cream cheese with a little cream and adding the blue cheese to that. It was very thick and looking back I would probably add more mushrooms to the mixture.

There are many ways to eat this cheesy, mushroom mixture. The Taster thought it would be delicious with steak, I thought it would be fantastic spread on a pizza crust with sauteed spinach. Or you can simply slather it on some toasted baguette slices. Or spoon it straight into your mouth. I promise I won’t judge.

Blue Cheese Mushroom Crostini
 
Recipe type: appetizer
Serves: 6
Ingredients
  • 8 oz baby bella mushrooms
  • 1 Tbsp olive oil
  • 2 cloves garlic
  • 3 oz light cream cheese
  • 2 Tbsp half & half
  • 4 oz blue cheese crumbles
Instructions
  1. Remove mushroom stems, wipe and roughly chop.
  2. Heat oil in pan.
  3. Add garlic and cook for about 1-2 minutes.
  4. Add mushrooms and cook for about 4-5 minutes.
  5. Remove mushroom mixture and return pan to low heat adding half & half and cream cheese.
  6. Stir frequently until smooth.
  7. Add mushrooms and blue cheese and stir until combined.
  8. Serve with toasted bread, steak, etc!
