add this: leafy greens

Most of us know that we should be including green leafy vegetables in our diets, but we may not know the what, why and how behind them. A combination of greens is best, so while kale is my absolute favorite, I make sure that I’m getting a wide variety of all of them (and additionally a variety of raw + cooked) in as often as I can! Aim for at least one serving of greens per day.

Greens to Eat:

  • Kale, Chard, Collard Greens
  • Bok Choy, Napa Cabbage
  • Broccoli Rabb, Beet Greens
  • Lettuce: Romaine, Bibb, Green/Red Leaf
  • Spinach, Arugula, Mache

Why Eat Greens:

  • High in antioxidants
  • High in manganese, zinc and vitamins A, C, and K
  • Good levels of calcium, magnesium, iron, potassium
  • Full of fiber
  • Can help to promote blood purification
  • Can help to prevent cancer

    I sometimes have to force myself to eat greens because the texture has to be “just so”, but I do love all of the health benefits. I STILL have got to get around to your creamed kale…I’ve been thinking and talking about it since you first posted it but somehow have never actually made it!

    Kale was my MVV (most valuable vegetable) of 2011 simply because of its versatality and it started leafing out again in March. So we’re enjoying the bounty of last years plants before this years start producing. Creamed Kale is one of my favorite ways of enjoying it.

      Spinach can sometimes have a weird (slimy?) texture to it when cooked – I usually don’t mind at all but I’m also usually eating it with something else.

    I’m horrible about getting on a kick with a certain green and eating only that one for a week or two…I should be better about mixing it up. My current favorite is a simple arugula salad (oil and vinegar dressed). Tonight, I’m putting it on a naan pizza. (Is anyone surprised?) :)

    I would have to say that greens are growing on me…
    I am relatively new, but have added kale to like every soup tht I make. This is a new favorite…found on a blog of course!

    I also like kale chips and green smothies. I tried to make this amazing looking bok choy stirfry this weekend but WF’s was out of boy choy (who knew that could happen). I always love extra ideas on how to eat (or hide) greens. Thanks for posting!

    I just had kale tonight. I find either making into chips or sauteing it so simple. I also like it in smoothies. You’ve got some on the list I need to try more of! Hopefully they will start popping up at the farmer’s market here soon!
