build it better: eggs

I know a lot of people prefer sweet things for breakfast, but in my opinion, there is nothing better than eggs for breakfast.

They are healthy.

Pretty cheap. (My husband wishes I would buy the really cheap ones, but I refuse).

So very versatile.

And they definitely don’t need to be limited to breakfast. (I will admit that I eat them so frequently for breakfast that they don’t make an appearance for lunch or dinner very often, but I’m working to change that).

Eggs are pretty perfect on their own, but there are ways that you can make them even better!

  • purchase Organic or Free-Range Eggs
  • add vegetables! Think veggie-filled omelets, frittatas or eggs served over greens (a personal favorite)
  • combine with a whole grain. Serve with some whole-grain toast, or over brown rice or quinoa with sauteed veggies.
  • eat the whole egg! There are loads of vitamins and nutrients in eggs and they are usually found in the yolk.

    I love eggs for regular breakfast as well! veggie filled omelets or just a fried egg with wheat toast are my go-to’s. (super interesting to see that I haven’t been hard boiling my eggs the “perfect” way)

    I am a bit strange in that I never want eggs early in the morning! I wish I wanted them for breakfast, but just the smell of them cooking sort of turns my stomach if it is before 11:00am! But I am definitely enjoying eggs more for lunch and snacks and I love that you are encouraging us to not be afraid to eat the yolk!

    I eat eggs all.the.time. Currently, fried eggs are my favorite, but I often have hard boiled with kale + arugula + avocado + tomatoes for lunch. And, yes, always, always eat the whole egg!

    I’m definitely an egg fan for breakfast myself! Whenever I go out for breakfast or make a nice one at home, I always come back to an egg dish! I would love to splurge sometimes and get some delicious pancakes or french toast but the eggs are always calling my name! I love to eat them fried atop polenta and avocado or ranchero style with lots of veggies and black beans! :)

      I am the same way! I always think I should order pancakes or something that I don’t make all the time at home, but I always go back to the savory egg dishes. I love the idea of topping polenta with them!

    As long as they are not runny, I will eat eggs any way. I love omlets and breakfast burritos…one of the best is from this little place in Door County, WI called Good Eggs. The line is out the door, but it is totally worth it!

    I’m a huge fan of the farm fresh eggs, but I buy the cheaper grocery store ones for baking and the BOY. He found my fancy eggs and has been loving them. You can totally taste the difference!

    I do love me some eggs! I eat them almost every morning too. My absolutely favorite way is overeasy with a little sea salt on toast. But, for a healthier and more filling version, I also enjoy 1 egg + 2 whites scrambled with seasoning salt, pepper and a wedge of Laughing Cow mixed in (it doesn’t really melt but whatevs!).

    Love eggs, and I am hooked on those I get from the local farms here. I would have my own chickens if I could. :) I grew up eating egg sandwiches, but my husband always thought it was strange. Not the restaurant version, but the home version between two slices of bread. Then when we were living in Brazil it was common to see egg on French breads for breakfast. He became hooked on them, so now my morning habits are much more accepted around here. Ha, ha!
