4th of july inspiration

Um, can someone please explain what has happened to June?! I do NOT understand how the 4th of July is next week.

It’s quite disturbing, especially because we haven’t done anything on our summer to-do list. (And I mean that we haven’t even made the list yet.) I do know that we want to spend some time at the beach, see a few outdoor shows but beyond the food + drink below, I have no idea!

At least this is a good place to start…

New Product Favorites | A Nutritionist Eats

oat revolution steel cut maple & brown sugar oatmeal. I have a confession to make. I’m going through a major obsession with maple & brown sugar instant oatmeal. Would I recommend it as a Nutritionist? NO! But it’s kind of addicting and so easy…

sweet earth ‘the greek burrito.’ It’s a blend of white beans, baby spinach, feta and oregano with 13 grams of protein and 5 grams of fiber. It was delicious! (I found it at Target, but have seen it in natural food stores too.)

clover ‘cream on top’ whole milk yogurt. I bought this on a whim and I must say that it’s been a while since I’ve boughten non-Greek yogurt. I loved it. The protein isn’t as high (obviously) but it was so lovely…I’ll definitely buy it again.

g & b cold brew coffee. G & B was recently featured in The New York Times as the “best iced latte in America.” It’s made with their homemade almond and macadamia milk. It was delicious, but I love their cold brew coffee even more. I never thought I would say this, but…it doesn’t even need cream.

New Favorite Foods (June) | A Nutritionist Eats

earthbound farm chia & soba noodles & asian greens powermeal bowl. These bowls are a little small for the price, but they would make a great meal (that’s certainly cheaper than a restaurant) when paired with some grilled chicken or tofu. An easy, delicious and organic meal! 

better booch kombucha. I’m still on a fermented foods/kombucha kick (I should really make my own) but I found this LA-made version in Peach Tea flavor (called Morning Glory) and it’s fantastic.

New Product Favorites | A Nutritionist Eats

massel concentrated liquid stock. I love having stock in the pantry, but I have a tiny kitchen and just don’t have the room for boxes upon boxes of stock. I’ve started cooking my quinoa with a mix of water and stock and it is SO much better than all water. Massel recently sent me some of their concentrated stock and I love that it is made with simple ingredients and is vegan and gluten-free.

cinco de mayo inspiration

When we were in Thailand (I know, I need to fill you in!) we fell into a consistent schedule of breakfast–>beach–>lunch–>pool–>snack–>sunset-at-beach bar–>shower–>dinner. Notice a theme there? Lots of food. It was totally my kind of vacation. And while I absolutely loved the fresh shrimp salads I ate on a daily basis (usually during the snack portion of the day) I was really craving/wanting avocados. Precisely chips and guacamole.

I was hardly in a place to complain, so I didn’t. (Ok, maybe like once.)

But when we came back to LA, I was allllll about the Mexican food. And avocados of course, but that’s standard. I’ve been researching chilaquiles, I’ve been researching burritos and I’ve been craving the old-school tortillas + refried beans + cheese that my old roommate and I used to eat all the time. Note: “researching” in my world means I’ve been eating a lot of the aforementioned foods and you’ll probably hear about them soon. 

So naturally, the combination of cinco de mayo recipes everywhere + my current food focus means I’ve been drooling over pretty much everything on the internet right now. I wanted to share some of my favorites – both light and… not-so-light.

Sip: Any good cinco de mayo celebration includes margaritas and I love this one because it’s made with all fresh ingredients. It’s been deemed the “best margarita you’ll ever have” and bonus – it’s less than 200 calories per drink. ¡Salud! Recipe and image via Cookie & Kate.

Guacamole Bar | A Nutritionist Eats

Spread: Guacamole bar. This is a really old post (sorry!) of mine, but a really fun – and delicious – idea that allows everyone to personalize their own guacamole. And…bacon!

Simple: Mollettes are SO simple, but satisfying and delicious nonetheless. Especially perfect if you’re feeding a crowd or picky people.

Splurge: Tijuana Fries don’t really need much of an explanation. Ok, I’ll give you the short version: chipotle carnitas + salsa + queso +avocado topped fries. thanksgiving drinks, menu, dessert, table and leftovers!

In the two weeks leading up to Thanksgiving, it seems to be impossible to talk about anything else. Obviously I’m guilty. Next Thursday can’t come soon enough!

And as much as I love our LA Thanksgivings, I have to admit that I’m also really missing our annual “Pre-Thanksgiving Thanksgiving” with friends this year. Things would definitely be different (think more babies and less drinks) but oh what fun we had! (Whine over.)
