I have been dying to make mussels for months now so I finally just got some! I have a recipe for Coconut Curry Mussels but I also wanted to try a wine-based broth. I sauteed leeks in some olive oil with salt and pepper. Add in the mussels, wine, garlic, lemon juice and parsley.  Cover and steam for 8 minutes. Serve in bowls with nice, crusty whole grain bread and gremolata. So lovely. And surprisingly easy. Maybe I can bribe my parents to visit with mussels???

1/2 cup parsley, chopped
zest from 1 lemon
1 clove garlic, minced
1 lb. mussels
2 leeks, sliced thin
2 Tbsp olive oil
1 1/2 cups white wine (I used the tasters chard, sorry!)
1 Tbsp garlic, minced
3/4 cup parsley, rough chopped
Juice from 1 lemon

in my cupboard: agua de coco

Nature’s wonder drink!

I was not always a fan of the coconut water, but like all things in life I’ll keep trying them if I think I should or it would be beneficial (it took me about 23 years to finally find my appreciation for olives and now I loooove them!)
Now why is Coconut Water so great? It is full of antioxidants, has way more potassium than bananas (15 times more) and is great at replenishing fluids. There are also rumors that it helps cure hangovers?!?! :) Now let’s be real – I’m not running marathons but I just know that I like it plain, with fruit, cold and often.
Potassium has also been shown to help regulate body fluid levels and reduce levels of stress hormone  (research from the British Journal of Nutrition)

My favorites:
Plain Coconut: O.N.E.
Coconut with Pineapple: Vita Coco (hello Pina colada!)
Give these a try, or maybe a few tries, they will not disappoint!

in my cupboard: coconut milk ice cream

I actually got to know the freezer-guy at my co-op over this ice cream.  That’s how much I requested it, asked if it was there yet and I’m sure generally just drove him crazy. But let me tell you, it was worth it.  It’s now at a lot of Whole Foods, co-ops and even the little health-food stores.

Why do I love this ice-cream?  Let me count the ways….i love coconut, it is extra creamy, sweetened with agave syrup (lower glycemic index), vegan, no soy, no trans fats, made with Organic ingredients, and it even has fiber (plain coconut has 6g per 1/2 cup).
Flavors I’ve tried: Coconut, Vanilla Bean, Cookie Dough (All fabulous)  I also just spotted the new Passionate Mango flavor which I will be trying next ice cream purchase!
