Daily Eats: 10.5.11

Day two of our trip to California. We had spent the night in Rapid City, SD and needed to check out Mt. Rushmore before heading south. I knew I wanted to sneak in a workout before hitting the road so I woke up and headed to the exercise room.

7:30: 30 minute Nike Training app workout + 20 elliptical/treadmill (this was a great workout, I will definitely use this again and it was perfect for traveling!)

Snack: apple eaten in hotel room before hitting the road

Brunch: we stopped at a neat restaurant called Tally’s Silver Spoon in Rapid City, SD. The smoked salmon benedict caught my eye (two poached eggs, smoked salmon, english muffin, hollandaise, ikura roe, tarragon and red pepper coulis) but the english muffin was soggy so I focused on the salmon and egg – it was good but sounded a lot better than it was.

I love ordering eggs benedict because I love english muffins, poached eggs and hollandaise, but I always order the hollandaise on the side – then I can add the amount I want – you don’t need much!

It was then time for Mt. Rushmore! We spent a few hours looking, photographing and learning.

Snack/Lunch: Since brunch was later in the day, I snacked on cheese/hummus and triscuits + kale chips + kombucha for lunch while driving through Custer State Park – Beautiful!

Snack: Popcorn from the lollihop box and random pretzels while driving in the middle of no where. :) We did see some wildlife, but I was feeling a little nervous when it was getting dark and there were no cars, no people, no houses…

But eventually we made it into Laramie, WY.

Dinner…was a little frustrating. We stopped by a bar and grabbed a drink and an awful appetizer and ended up just checking into the hotel and ordering mediocre chinese food. (Combo Lo Mein – his favorite, Shrimp & Broccoli – my favorite) It is times like this that make me realize how accustomed to good food we are!

After two long days of traveling and sight seeing, I’m ready to collapse into bed. Tomorrow we’ve got another 6 hour drive but hopefully it will end with a delicious meal – we deserve it. :)

    Finding quality food while traveling through small towns can definitely be a challenge- I’ve totally been there. Although, you had some awesome snacks! That popcorn looks amazing- I need to get my hands on some of that!
