Is it really April? I’m still not convinced.

Coffee: I started with some coffee + 1/2 & 1/2 but just wasn’t feeling the coffee so switched to some green tea. Some days that happens – I have no idea why.

Breakfast: I hadn’t had eggs in a few days so I was craving them. Eggs and toast is probably what I would consider my standard/favorite meal to be – anytime of the day! I never get sick of it. Yesterday I had, sourdough rye bread + earth balance + 2 eggs.

I had a busy day of work, spring cleaning and prepping for an exciting interview – cross your fingers!

Workout: This really isn’t a “workout” but I wanted to move a little (but didn’t feel like actually working out) so I went for a short walk to pick up  a few things at Whole Foods. (1.5 miles) The weather in LA was absolutely gorgeous – it felt so good to be outside!

Lunch: Vegetables were, uh, lacking this past weekend so I was needing produce in my life! I had an apple while putting everything together.

Salad: mixed greens + blue cheese + nuts + dried cranberries + champagne viniagrette.

Side: bowl of kale sauteed with coconut oil.

Snack: 2 cups of Movie Theatre Popcorn from Trader Joe’s. I love my popcorn. :)

At about 6pm I decided I should do my taxes – normally I get them done right away in February, but I’ve been putting them off, mainly because I thought it was going to be a huge pain this year, but it really wasn’t. I have two small glitches to work through and then they are done! (Let’s hope the “small” glitches are just that)!

Taxes –> Wine!

Dinner: One of our go-to meals of late has been turkey meatballs (Trader Joe’s) with marinara. I usually serve mine over greens or vegetables instead of pasta because I never miss the pasta and I’d rather eat really good pasta than average pasta.

kale + 4 turkey meatballs + marinara + green beans

 And 2 ginger chews to finish the night off!

      I was concerned because we’ve lived in 2 states, different jobs, etc. – but still don’t have any of the real tough stuff (property, etc.)!

    I did mine in early March, I hate doing them but found Turbotax to be pretty helpful. I will have mine done next year because it will involve selling 2 houses, combining income, Scott’s business and all sorts of very complicated things.

    Your salad looks absolutely perfect. I too am a huge popcorn fan. I could eat it every evening :) I do have my taxes done but only because my husband is all over it…if it were left up to me, I’d be doing them on April 14. :)

    We just finished ours. Andy did them for us which was a blessing because I’d never finish. Taxes confuse the heck out of me!

    That salad looks so good. I need to recreate it! I love champagne vinegarette

    I have, but my dad was doing his and my mom’s last night and was having a panic attack. Let’s just say, they are going to hire someone to do theirs! :)

    Luckily, I am married to a numbers guy so I just have to sign where he tells me! (I trust that we won’t be thrown in the clink any time soon.)

    Your menu looks good to me. Love Trader Joe food but haven’t ever had their meatballs. I’ll be getting those the next time I’m there (nearest is 2 hours away). That plate with the green beans and meatballs appeals to me.

    I will keep my fingers crossed on both the interview and the taxes! I still need to do mine this week, as well. Must. Stop. Procrastinating.

    Adding wine into the mix would help. You’re a genius. :)

    I’ve been LOVING kale sauteed with coconut oil lately. I don’t know what took me so long to buy coconut oil, but I’ve been slathering it on everything. I sure hope what they say about its health benefits is true! ;-p

    You definitely aren’t a lone procrastinator when it comes to taxes; I have to do mine…tomorrow. Eep!
