daily eats: 7.20.11

I’m not sure about the weather where you live, but we in Minnesota are currently living in what feels like a hot yoga room. Except that the hot yoga rooms have a temperature of 105, which is cooler than the temperature outside. Regardless, I sweat myself silly Tuesday morning at hot yoga and then tried desperately to stop sweating so I could be presentable at work!

Wednesday started off very similarly with a yoga sculpt date with Hyedi at 6:00 am that also was extremely sweaty. I can’t tell you how much I love working out in the morning, even though actually getting out of bed is horrible! I swear it makes the day SO much better.

8am: coffee + coconut milk and lots of water – Does anyone else have days when coffee tastes especially good and others when it doesn’t taste so great? This was one of those great coffee days, which made me very happy!

Breakfast: kashi go lean+ chia seeds+ strawberries + almond milk eaten at my desk out of a tupperware. Classy. (Plus another half bowl)

Lunch: quinoa + sauteed greens + flat omelet. Then I added hummus. And then since I had goat cheese in my work fridge I thought why not add that too! I promise it tasted good. {1 serving quinoa, 2 eggs, lots of greens, 1 Tbsp hummus and 1 oz goat cheese) I ate more than half and was pretty full so I saved it in case I got hungry and then ended up tossing the rest. I always feel really bad wasting food, but I strive to listen to my body, so I do!  

This is my second week with some quinoa lunches and I think I’ll keep my streak going next week too, why not! They are so easy to put together, can be eaten at room temperature and so satisfying.

Thanks to Catherine (Food Snob) who commented last week with some lunch ideas from Fine Cooking, one of which was a rice and flat egg omelet (lunch inspiration) and then sent an email with even more lunch ideas!

Snack: Mango 2% Chobani. Originally I wanted to eat it frozen, but I couldn’t wait that long! :) Still tasted like a sweet treat!

Snack II: Wine and cheese was had after working on some blog things for Satisfy My Sweet Tooth and making dinner. Much like coffee, these things also made me very happy. 

Dinner: grilled za’atar chicken + sauteed green beans from the farmers market + arugula with fresh lemon juice, olive oil and salt & pepper

The rest of the evening consisted of prepping/cleaning for the weekend (It’s my bachelorette party!!!) and then some Weeds (the tv show that we are currently obsessed with) and of course, blog work.

Snack III: I knew going into dinner that I’d be having popcorn tonight. About 86 servings. :)

    I don’t drink coffee every day, but I do know what you’re talking about! Sometimes it is exactly what I want, and other times it just doesn’t taste so great.

    And yes, the heat needs to stop!

        I have this really basic recipe that I like which has parsley, lemon juice, onion, etc…then I douse it in Sriracha and put in a ww wrap! I’ve been wanting to try out different things though — including incorporating more into my breakfasts!

        Also, the NY Times health section had a bunch of recipes not too long ago all incorporating quinoa AND I just found a great new “whole grains” cook book that has a lot of tempting quinoa recipes :)

    I’ve been eating Jenna at ELR’s quinoa with beets and goat cheese for lunch. Yum! I work out first thing in the morning too and it is the absolute best! There is so much time after work now!

    I’ve been loving quinoa bowls lately too. So good in this hot weather. I love mine with tomatoes, chickpeas, feta, olives and zucchini.

    So have you been watching Weeds since the beginning? I’ve a fan since season 1, but this season is just so out there that it’s hard for me to enjoy it as much as I used to. It’s like Nancy really fell off the deep end!

      We started at the beginining but are only at season 3 or 4 right now…and I can see how she would be off the deep end! :)

    Weeds is such a good show- I was actually just having a Twitter conversation about it! (sad, but true) I love morning workouts too, but it’s been so hard to pull myself out of bed with the heat this week!

    I have been obsessed with quinoa the last couple of months. I had always been intimidating about making it before, but it is so super easy. I LOVE Weeds and have gone through season 6. Have fun at your bachelorette party!

    I made a big batch of quinoa at the beginning of the week and also have been experimenting with some new recipes. I’m thinking of trying it for breakfast with Greek yogurt, fruit, and of course almond butter. :) I like that you had it with eggs and will have to try that too. Happy “almost” Friday!

    I like to make quinoa at night and then it’s ready in the morning and I eat it like oatmeal with walnuts, fruit and a little brown sugar. Yum!

    I wish I could have had one of these days. Instead I slept in too late and had cheetos, m&ms and a lot of bad stuff in honor of national junk food day – for real, my work celebrated it.

    i totally know what you mean about coffee. somedays it’s the best thing ever, other days i just don’t have a taste for it. weird…

    Oh yes, I definitely have “good” and “bad” coffee mornings! I haven’t quite pinpointed why…Maybe it depends on the tiredness factor? Or what I’m eating? Yet to be determined!

    I just got to Minnesota, visiting my aunt and uncle, who live about 45 minutes southwest of Duluth, and I couldn’t believe the heat and humidity. Finally starting to cool off now. We used the oven for the first time yesterday :) I wish I would have found your post last week for some good ideas on healthy foods that don’t take the extra heat to cook.
