Writing out the date 8.16.11 made me immediately think of the day I’m getting married: 9.17.11!! Coming up sooo quickly! I swear the weeks are going by twice as fast as normal!
6:00 am: Cursing my alarm clock, but finally roll out of bed and downstairs to the workout room – 40 minute treadmill workout (3.5 miles).
8:00 am: Standard coffee + coconut creamer. As you can see, it always makes me really happy. I’m all about the little things…
Breakfast: Overnight oats! This was my first time ever trying overnight oats, but I loved that I could prep everything the night before. I combined 1 cup 2% Greek Yogurt + 1/4 cup steel cut oats + 1/2 cup milk in a tupperware and stirred it until combined. I topped it with frozen raspberries and took the whole thing to work. Not pretty to look at, but filling and delicious – I’m a fan! Have you had overnight oats before? What is your favorite combo?
Lunch: Caribou Coffee’s new grilled gouda turkey pesto sandwich + green beans + green tea. I’ve been looking forward to trying these new Grilled Cheese Sandwiches, plus I had a coupon to use. I knew it would be lacking in veggies so I brought along some green beans from home to round out the meal.
Unfortunately the grilled cheese was a little disappointing. The flavor was great, but it was a bit soggy, 1/4 of the sandwich didn’t have any pesto on it and it wasn’t very filling for the amount of calories (510 calories, 24 grams of fat, 29 grams of protein). Kind of a bummer.
Snack 1: apple + almond maple butter (Almost had a panic attack when I realized I had finished my peanut butter jar the day before, but thankfully I had a stash in my drawer! You just never know when you are going to be desperately needing some nut butter. 😉 )
Snack 2: minnesota sushi (ham + pickle + cream cheese) – I think the last time I had this it was on the blog too! Hopefully you don’t think I eat it all the time…hehe.
6:30 pm: When we arrived home I desperately wanted to go out for a walk but the sky turned dark and thunder and rain followed shortly. Turns out it was good we didn’t head out!
Dinner: I didn’t really have anything planned (the horror!)…so we went with my standard meal as of late (seriously, I probably have had 6 of them a week) of a Sprouted Tortilla Pizza with marinara + arugula + mozzarella + sriracha for dipping and broccoli on the side.
The pizzas have pretty impressive stats (300 calories, 8.5 grams of fat, 18 grams of protein and 7 grams of fiber) – and I don’t feel at all bad for eating two! But mostly they taste great and are really easy to throw together.
And before I knew it, my yoga bag was packed, my lunch was made and Tuesday was over…how was your Tuesday?
