mango cucumber wine cooler

I’ve been loving white wine this summer. In the past, I’ve always struggled with drinking red wine in the heat of summer but after learning more about wine this winter and trying different wines, I think I’m definitely a lot more open to varieties other than cabernet.

Finally!

I used a fruity pinot grigio (my favorite white) for this drink. I definitely tasted more of the cucumber than the mango and it gave the wine less of a sweet flavor and more of a mellow cucumber flavor which I LOVED. I had planned on taking it to a girls night, but unfortunately my friends weren’t able to try it because after I poured the wine into a transportable plastic pitcher, it was knocked off the counter, cracked on the floor, and all of the delicious wine leaked out. I stood in the kitchen frozen and screaming. I managed to save a glass and after trying it out? I was a little heartbroken there wasn’t any left and I wouldn’t be able to share it.

Ingredients
  • 1 bottle pinot grigio
  • 1 mango
  • 1 cucumber
Instructions
  1. Clean mango and cucumber.
  2. Slice cucumber.
  3. Peel and slice mango.
  4. Pour wine over cucumber and mango and let chill for at least 3 hours.
  5. Serve with a cucumber slice garnish.

    Looks great! I had the same scenario happen in my kitchen the last time I made sangria, and let me tell you, I was glad there weren’t any children around that mouth of mine!

    Yum, that’s such a great idea! I know a white wine-loving friend that needs this recipe. :) Tragic about the spill- that would have put me in a horrible mood (oh, and it’s totally something that would happen to me, too)!

    YUMMY! I’ve really taken a liking to white wine this summer as well. It’s been way too hot for red and sometimes my headaches haven’t been too enjoyable the next day. My favorite white is: Evolution. Try it out. It’s delish!

    So sad!!! This recipe looks perfect for summer. I am totally a red girl, but I sway towards white in the summer time. Just got back from Cooper’s Hawk (my favorite wine place), so wine is on my mind…will defintiely try this. Which pinot do you use?

    I didn’t use anything special – just a bottle in the $10-$15 range. (I’m not very picky)

    Such a bummer about the broken pitcher and lost wine! I had a similar experience with a sangria pitcher last summer…and I cried. :-p Hope you had a lovely weekend!
