As you know, I love the flavors from the Mediterranean. I came across a recipe by Lundberg’s for a Greek Rice Salad and knew that this was calling my name. I figured it would be perfect to take for lunch for a different salad with more than just veggies. And it was perfect! I made it on a Sunday and used it for 2 lunches that week (and saved a little bit for the taster too!) It was delicious but I think next time I’ll add some chopped olives for a little more flavor.
Mediterranean Rice Salad:
2 cups cooked Organic Brown Rice (Lundberg’s is my favorite)
1/2 cup Sundried Tomato Tapenade (from leftover Tapas Night)
1 cup Marinated Artichokes
1/2 cup sliced Green Onions
Served over greens, green peppers, cucumbers and sprinkled with feta cheese.
