Sometimes I get really excited about dinner.

This was one of those dinners. I had a recipe from Bon Appetit that I was dying to try and I just knew that my husband would love it. He did. (He told me about 4 times)!

The chicken was cooked perfectly (something I rarely do!) and the crunchy, cheesy topping was delicious. The recipe comes together very quickly – perfect for a weeknight meal that feels special.


Roasted Parmesan Chicken

Prep Time: 5 min

Cook Time: 20 min

Ingredients (2 servings)

  • 2 medium sized chicken breasts
  • 1/3 cup shredded parmesan cheese
  • 1/3 cup panko
  • 2 garlic cloves, minced
  • 1 Tbsp olive oil
  • salt & pepper


Preheat oven to 450 degrees.

Season chicken with salt and pepper.

Combine panko, parmesan, garlic and olive oil in small bowl.

Press panko mixture onto chicken.

Bake for about 15-20 minutes, until chicken is cooked through.

    I make something really similar, it is great with a bit of cayenne or red pepper flakes mixed in.

    my wifes favorite is chicken Parmesan. we made a deal to swap cooking tonight is my night. I’m going to give your recipe a go. i’ll let you know how i did with it..keep your fingers crossed…lol

    Love the panko-parm idea for a spin on the usual chicken. Leftovers would be delicious sliced over a nice green salad for lunch!

    Yum, crunchy+cheesy is kind of the best combo ever (hence why baked mac ‘n cheese is so much better than the stovetop kind!). What did you serve on the side? Are those romaine spears?

      Yes, it is roasted romaine…they weren’t that good so I didn’t include the recipe.
      Now you have me craving crunchy mac & cheese!
