This was one of those dinners. I had a recipe from Bon Appetit that I was dying to try and I just knew that my husband would love it. He did. (He told me about 4 times)!
The chicken was cooked perfectly (something I rarely do!) and the crunchy, cheesy topping was delicious. The recipe comes together very quickly – perfect for a weeknight meal that feels special.
Roasted Parmesan Chicken

Ingredients (2 servings)
- 2 medium sized chicken breasts
- 1/3 cup shredded parmesan cheese
- 1/3 cup panko
- 2 garlic cloves, minced
- 1 Tbsp olive oil
- salt & pepper
Preheat oven to 450 degrees.
Season chicken with salt and pepper.
Combine panko, parmesan, garlic and olive oil in small bowl.
Press panko mixture onto chicken.
Bake for about 15-20 minutes, until chicken is cooked through.
