I’ve decided that I need to start making breakfast for dinner more often.

There are a lot of things to love about breakfasts for dinner. In my world, that would mean eggs.

These huevos rancheros are great: flavorful, filling and so budget friendly.

There are many varieties of huevos rancheros, with some more difficult than others, but I decided to go the really easy and simple route. They literally took me 10-15 minutes to pull together. If you want to make your own huevos sauce, Weekly Bite has a great recipe!

Ingredients you’ll need:

  • Corn tortillas
  • Beans (black or pinto)
  • Eggs
  • Shredded cheddar cheese
  • Toppings: salsa, pico de gallo, huevos sauce, sour cream, fresh cilantro

Steps:

  • Heat up the beans and season as desired
  • Fry the eggs (sunny side up is best, but you could also scramble)
  • Melt the cheddar on the tortilla under the broiler
  • Layer cheesy tortillas with fried egg and salsa and any additional toppings
  • Serve with black beans and vegetable

    I love breakfast for dinner, baked oatmeal, eggs, and eggs in a hole is personal favorite.

    I love huevos rancheros – cheese, sauce, tortillas…you kind of can’t go wrong. I’m glad that you fried your eggs rather than scrambling them – I don’t know what it is, but fried eggs are much more dinner-appropriate. ;)

    i love breakfast for dinner!! but mine is usually an excuse to eat cake (in the pancake form)… eggs have a less common appearance. will have to try this! :)

    Breakfast for dinner is the BEST. I have a slight aversion to huevos racheros (thanks to eating them right before I came down with the flu), but these just might make me try ‘em again :)

    I’m a big fan of breakfast for dinner. Back when we were living in Chicago, my husband and I made omelettes at least once a week. This recipe looks awesome!

    This looks so great! It’s the second Huevos Rancheros recipe I’ve seen today and now i’m craving it big time. Oh, and I’m a huge fan of brinner!
