st. patrick’s day

When I think about St. Patrick’s Day I think about a few things:

  • Corned Beef
  • Green Beer (although I don’t think I’ve ever even had it)
  • The Taster

Why the Taster? His red hair and Irish blood of course!


This year, between my travels and his, we decided on a rather low-key celebration at home.  On the plane ride home I was reading Vegetarian Times and found a few easy dishes that could be be quickly put together. Then I de-vegetarianized it by adding mini reubens. It had to be done.

Mini Reubens

Mini Cocktail Rye Bread Squares + Swiss Cheese + Sauerkraut + Shaved Corned Beef + Thousand Island Dressing

    We don’t really celebrate St. Patty’s Day — but today is the anniversary of our first date — 4 years ago!

    I’m celebrating with you!!! :) Yum, very much looking forward to it! I wanted to make my grandma’s irish soda bread but that plan went out the window… Brian is determined to bring his wings and I’m still thinking of something fun to bring….

    I’m not celebrating tonight because I have school! But I did go to a local parade this weekend. Those mini reubens are so cute!

    Oh my gosh those look so good! What a combination of flavors! I LOVE sauerkraut.

    My St. Patty’s day is going to be filled with good food and ballet. I am quite looking forward to it! I better run or I’m going to be late!

    I grew up eating corned beef and cabbage on St. Patrick’s Day. Oh, and green milk and green eggs. My mom was liberal with the food dye!

    Your mini reubens look delicious! The taster was one lucky (Irish-looking) man tonight!

    I celebrated by going to a Chinese dumpling-making party at my brother’s house. Very random, but lots of fun! We compensated for the wrong ethnic cuisine by drinking a little green beer. :-)

      We always had green milk too but I never liked it!
      I would have preferred dumplings actually, I love them!!
