thanksgiving 2010: spinach salad

Along with the heavy sides of stuffing and mashed potatoes, a light and healthy spinach salad is welcomed on any Thanksgiving spread. The combination is a classic one, and ever since my boss recently made it, I knew it needed a place on my table. And soon. Couldn’t your Thanksgiving plate use a little something healthy?

I’ve never prepared an entire Thanksgiving meal (and that’s probably a good thing) but I can only imagine that if you do, some of the dishes need to come together without much prep and come together quickly. So this salad is everything you want for a hectic, calorie-laden day: easy to make, a healthy dose of greens and delicious to boot!

Spinach Salad - 4 servings

  • 1 – 5 oz bag of Organic Baby Spinach
  • 1/8 red onion, thinly sliced
  • 1 cup strawberries, sliced
  • 1/2 cup toasted walnuts
  • 1/2 cup Brianna’s Poppyseed Dressing

Toss together spinach, onion, strawberries and dressing. Sprinkle walnuts on top and serve.

    oh BOY. This combo is my (tied-for) ALL TIME FAVE!!! Co-favorite salad combo: arugula, pears, bleu cheese and pecans. Yum. And how GOOD is Brianna’s Poppyseed??! The ONLY bottled dressing I buy.

      I just had a similar salad and it was wonderful! arugula, pears, dried strawberries and bleu cheese – with Brianna’s Champagne Viniagrette dressing! Delicious!

    I have brought green salads to Thanksgiving the last few years in a row, and they have been VERY well-received. Apple/fennel/walnuts/bleu cheese has been tie with beet/goat cheese for the most-requested!

    Strangely, I don’t have a salad on my menu this year! Oh well! (We will have steamed green beans, though.) :)

    I just made a spinach salad like this on Tuesday for my cooking class and added everything you plus goat cheese. So yummy! And I love that poppyseed dressing as well! Have a great day!

    You’ve covered it all: crunchy, munchy, and refreshing with perfect blends of nutrients and fats. I’ll have it with a side of mashed sweet potatoes please. :-)

    What a delicious combination of ingredients! There’s something about the combo of strawberries and spinach that I love – maybe it’s the sweet and slightly bitter flavors? Thanksgiving at my in-laws’ tends to be heavy, so maybe I’ll whip up this salad for the table. Great recipe!
