tomatoes, tomatoes, tomatoes!

If you have a garden (or visit the farmers market) you’ve got to have a ton of tomatoes. Right? In addition to having a dog, part of our house-sitting duties were eating the food from the garden! Turns out, that is a very fun chore.

We had a drawer full of tomatoes and they needed to be eaten. Besides throwing them in salads, using them in summer crostini’s and roasting them I was kind of running out of ideas.

So like anyone, I turned to the internet for some tomato inspiration. Here are some of the favorite recipes I found…

    i bought the cutest cherry tomatoes at the farmer’s market on saturday and made corn salad with them. (and with corn, cilantro, sage, onion… obviously the corn, right?). but mainly i’ve just been eating them straight up. yum!

    That bloody mary is taunting me as I’m sitting here at my desk at work…I would like one right now, please! I’m also a big fan of making a batch of bruschetta with fresh tomatoes- easy and it can top more than just crostini! (Love my multi-purpose dishes)

    Taking a summer with this wonderful tomato recipe is really good, and how much it reminded me of one recipe using Basil leaves, tomatoes, olive oil, parsley and some crushed garlic bread and I made a salad out of it. :-)

    Tomatoes, onion, and cucumbers sliced thinly add a few calamata olives and crumbles of feta cheese then drizzle with a little olive oil and balsamic vinegar. Yum!

    That’s not a bad summer gig! We have lots of tomatoes and I finally got some salsa canned this weekend. I must make some tomato sauce for bloody marys next!
