weekend breakfasts

Lazy weekend breakfasts are something I long for.

I look forward to them when weeks are hectic and weekends involve traveling.

The breakfasts are amazing. And all I have to do is make the coffee.

The Taster typically adds any veggies and cheese that we have in the fridge into an amazing omelette or scramble.

The kitchen gets a little messy. But it’s worth it. :)

 

Breakfast Omelete / Scramble Ideas: 

  • roasted red peppers + leeks + feta + arugula (shown above)
  • zucchini + onions + tomatoes + feta
  • caramelized onions + spinach + smoked gouda
  • kale + onion + goat cheese
  • peppers + leeks + onion + goat cheese

    My favorite weekend breakfast is: whole wheat everything bagel, vegetable light cream cheese, red onion, lettuce, tomato, and LOX. LOVE LOVE LOVE! I haven’t had one in a while and think I need to treat myself this weekend. ;) Congrats on the wedding and cannot wait to check out the pictures!

    I love a few over easy eggs + buttered toast. If I’m feeling ambitious I’ll make some roasted potatoes and serve the eggs on top.

    But honestly I love almost any type of breakfast food: french toast, omelets, pancakes, casseroles, etc.

    I am in LOVE with sharp cheese in omelets — feta is my favorite, it’s so salty — and no matter what pancake house we’re at, I have to order eggs. I’ll make whole wheat pancakes at home, but I can’t pass up all the yummy egg dishes when we’re out!

    Ahhh yummy! I love weekend breakfasts too! Sadly, I don’t love eggs. I always think I do, so I make or order them, but then I feel a little weird after eating them. But I DO love all those veggies and sausage and bacon and of course, cheese!

    I have to second the lox and bagels! It reminds me of being young when my dad would get up early and go to the bagel shop and we’d all sit together and eat bagels and lox with capers and cream cheese together- so relaxing!
